Unlike standard machinery-pitted olives found on supermarket shelves, our Olives Scaciati are prepared by hand using the traditional method. We gently crack each olive, breaking the skin and flesh while keeping the pit intact. This crucial step is the secret to their incredible texture and flavor absorbtion.
By cracking the olive, we allow the curing brine and our secret marinade to penetrate deep into the meat of the fruit. This not only cures the fruit more evenly but infuses every single bite with our signature blend of spices.
Once cracked, our olives undergo a patient curing process to remove natural bitterness. Then comes the magic: the marinade.
We dress our olives in a vibrant, aromatic bath of garlic, Italian herbs (pepper and oregano), Red Wine Vinegar, and Olive Oil. Our signature blend features a mix of huge Colossal Green olives and rich Kalamata olives.
